  1. Combine oil, curry and ginger in a bowl.
  2. Salt and pepper to taste.
  3. Cut chicken into same-size cubes.
  4. Place chicken in a plastic freezer bag.
  5. Add marinade and shake to coat chicken.
  6. Marinate for 30 minutes in the refrigerator.
  7. Preheat grill to high.
  8. Skewer chicken cubes,diced mangoes and onions.
  9. Grill about 6 - 8 minutes, making sure to turn a few times.
  10. Salt and pepper to taste.
  11. When ready to serve, sprinkle with fresh coriander.

Grilled pineapple is a favorite, so I was drawn to the idea of the mango. (I think I have had it, just not sure.) This was one of those recipes where the whole was greater than the parts as the flavors came together rather beautifully. The chicken was delicious but really elevated by the onions (red in my case) and the mango. And the spices in the chicken served to heighten the natural sweetness of the onions and mango. Served with spinach and corn for a tasty and easy supper. Made for Photo Tag.
