Exotic and Sweet Moroccan Chicken with Spicy Rice

I tried this recipe yesterday. I'm sorry but the cinnamon and powdered sugar didn't do it for me. I prefer cumin and lemons in the Morroccan recipes and the powdered sugar was too sweet.

  1. Cut the chicken breast into largish bite-sized portions.
  2. Mix the flour with the cinnamon, confectioner's sugar, ginger, salt and pepper to taste.
  3. Dredge the chicken pieces in the flour mixture.
  4. Fry in shallow oil until browned and cooked through, turning once.
  5. Keep warm in a low oven.
  6. Saute the chile peppers, mushrooms and onion in oil until softened and golden.
  7. Add the cooked basmati rice and continue sauteing until cooked through.
  8. Add the salt and pepper to taste.
  9. Spread the rice and a large platter.
  10. Top with a pyramid of chicken pieces.
  11. Garnish with fresh cilantro (coriander), if desired.
