This is a great cornbread recipe! I don't know how it could be better, even if made with high-calorie ingredients. I, too, used vanilla non-fat yogurt, and used almost 1/4 cup Splenda rather than sugar. This is a keeper! Thanks SnowHat!

  1. Preheat oven to 400 degees.
  2. Combine flour, cornmeal, sugar, baking soda, and salt.
  3. Stir in yogurt and eggs lightly until well-blended.
  4. Pour batter into 8x8 pan.
  5. Bake for 20-25 minutes.
