Everyone Loves It Meatloaf

"I modified a recipe from Emeril's book "There's a Chef in my Kitchen" on a night when I had little time and less ingredients. The family loved it, so I thought I would share."

  • Mix all ingredients for the meatloaf together, and press into an 8x8 baking pan.
  • Mix together the glaze ingredients, and spread over the top of the meatloaf. Bake for 1 hour at 375 degrees.

  1. Oh, my, I can see why everyone loves this! So very good. I halved the recipe as it's just DH, me, and 2 very small toddlers. Baking time for this was around 35-40 minutes. I loved that it was in an 8x8 pan too, it made serving so much easier than trying to dig out of a loaf pan! Made for PAC Spring '11.

I love to cook, but have gotten out of the habit of making elegant meals. 3 kids will do that to you-it seems all they want is hot dogs and boxed mac and cheese! I prefer vegetarian dishes, but since I live in a small community it's often difficult to find good substitutes or the right ingredients. I also end up making a separate meal for my family. Again, 3 kids who only want hot dogs. ;) My dream kitchen would be a fully stocked, commercial kitchen where I could experiment to my hearts content without interruption, and the grocery fairies would replenish my supplies at night while I'm sleeping.
