This essence is a richly flavored version of vanilla extract. To substitute the essence for extract, pour it from the bottle through a tea strainer and measure out half of the usual quantity of flavoring The Cook Book By Oscar Of The Waldorf.
- Put the vanilla shreds into a bottle with the brandy, and cork the bottle.
- Shake the bottle occasionally, and in the course of three months time the essence will be ready for use.
This is exactly half of my own recipe - 4 cups of booze and 6 beans. The result is very good!
