I loved making these cookies, and will definitely make them again. This recipe is very easy, and the cookies freeze well without the filling, so they can be done ahead. The reason I gave 4 stars instead of 5 was that I found there was not enough cream to melt the chocolate, so I had to add more...other than that the recipe worked great. I used the small amount of left-over ganache to make a few truffles. Thanks for sharing.
These are really good, I opted to use crushed nuts instead of the candy canes....we are not really peppermint lovers at our house.
TONY! TONY! TONY !!! This is the MOST decadent cookie I have EVER eaten ! The only adjustment to the cookie dough, was to use 1 Tbsp. King Arthur BLACK cocoa with 2 TBsp Hershey'd Dark. I had nothing to wash since I licked every piece of kitchenware that had a smidge of dough on it ! I only got 28, since I made them larger. They are not as puffy as Breezytoo's, and I had some difficulty in making a "thumbprint" stay. I only had Bittersweet chips, but they were fine, and the coffee liquor I added was STARBUCK'S !! Nice to have some leftover sauce, and I heavily drizzled some on a slice of banana bread, for lunch. This is a winner, Tony - thanks for posting. Made for Fall '08 PAC.
I made these and my mom liked the coffee flavor. A did not use the candy canes because the only ones we have are packed away with the Xmas stuff and are several years old.
Oh me, oh my! These are wonderful! Very easy to make as well! I made mine a bit larger then the suggested one inch balls, so only got about 2 dozen. After making the filling I let it sit for just a bit, then spooned into each and let them totally set up from there. These are so soft and when you bite in to that espresso filling its a little taste of heaven! Next time I'll probably top with ground hazelnuts as well ~ these will definitely be made again, thank you for sharing! :)
I really enjoted these cookies although I think next time I will omit the candy canes. Made for PAC Spring'08
