Erin's Chili Con Carne With Beans

Modification of Loves2Teach's recipe. I make it with extra-lean ground beef and different spices.

• Prep Time: 10 mins
• Cook Time: 2 hrs

Ingredients:

Servings: 4

• 2 lbs extra lean ground beef
• 1 (29 ounce) can tomato sauce
• 1 (29 ounce) can red kidney beans (no liquid)
• 1 (29 ounce) can white kidney beans (no liquid)
• 1 medium onion , diced
• 1 jalapeno pepper , diced (add seeds for more spice)
• 1 cup mushroom , diced
• 3 medium tomatoes , chopped
• 1 teaspoon cumin powder
• 2 tablespoons chili powder
• 1 ½ teaspoons black pepper
• 2 teaspoons salt
• 2 cups water

Directions:

1. Brown beef and drain fat.
2. Add in remaining ingredients.
3. Cook on low-medium heat for 2-3 hours.
4. For faster cooking, cook on medium and add only one cup of water for about a hour.

Made this for lunch and froze some for future lunches. I didn't add the jalapeno or the mushrooms as I didn't think my family would like them. I also used canned diced tomatoes instead of fresh. We enjoyed this. Made for Spring PAC 2010.
