English Muffin Loaf Bread

"I found this years ago and have changed it some since then. This is what I have ended up with. I like it because you let it rise in the pan you bake it in, one less thing to wash, yeah!"

  • Grease loaf pan with shortening or butter and dust with cornmeal.
  • Scald milk and water till 110°F
  • Dissolve yeast and sugar in liquids.
  • Slowly mix whole wheat and oat flour, baking soda, and salt with 1 cup bread flour and liquids.
  • Gradually add enough bread flour to make a soft dough that pulls away from the sides of the bowl leaving it clean. I mix this by hand rather than dough hook since it does not need to be kneaded.
  • Turn in to dusted loaf pan, dust top with light sprinkle of cornmeal and place in oven with pan of hot water in back lower corner of oven.
  • Let rise 60-90 minutes till taunt and tall,.
  • Turn oven on to 350F and let bake about 20 to 30 minutes till golden brown and sounds hollow when tapped.
  • Turn oven off and vent door to allow to slowly cool, about 10 minutes then turn out on cooling rack to cool. Will slice best when cooled. Great with butter and lemon curd. Still working on a curd recipe I like.

As a gardener I enjoy cooking what I grow. I have a 11 raised beds in my back yard with most of them in production based on the season and my work schedule. I like to grow different items like purple peas and rainbow swiss chard. I believe in only heirloom seeds and no hybrids and especially no GMO! Organic is a given and if I could have some animals where I live I would so I did not have to haul in "fertilizer". I make my own compost and consider my gardening as a way to work off my chocolate cake. I love trying new recipes and spices. I try to cook something from a different country every few weeks. My husband is the one that cooks the meats better than I can and I cook the deserts and breads he refuses to try. My husband takes his lunch to work and likes soup with sandwich for lunch so we make a weeks worth of soup like chicken, lentil, split pea, beef barley and freeze. We have an annual "Patriot" party for our internet friends from across the country and those around the world that can make it every spring and cook on our grill that is a former 100 gallon propane tank. Of course there is always the "blessing" of the brisket by the "special guest" and of course a variety of different foods like wheat grass juice, my version of tabbouleh with a Texas twist and homemade cream corn. Salad from the garden and my chocolate cake rounds out the meal with plenty of good conversation about keeping this country/world free from a one world government. Yes I am a little political but food is important to me and I want to be able to grow my own and not have to be dependent on corporations for my food. The fall of Rome was not due to sports but they out sourced their food and when they lost their source had none of their own. Fresh food is the real key to healthy eating. We need to take back our food supply so that we will not need to be dependent of others for our survival.
