English Muffin Chicken Pizza

My children love this snack and they can make them themselves. I got this recipe from the grocery store.


  1. Preheat oven to 350.
  2. Halve the english muffins and spread each with 1 tablespoon pizza sauce.
  3. Add one slice of chicken and top with one slice of cheese.
  4. Place on baking sheet and bake for 10 minutes or until cheese is melted.
  5. We have also toasted the muffins and cooked these in the microwave.

Made this for lunch yesterday. Nice twist on that childhood fave English muffin pizza. I substituted the deli chicken with some diced cooked chicken. I also drizzled with a little ranch salad dressing when they were done. I made this in the toaster oven so it was done a little faster (did not time it). Quick, easy and yummy!

How much fun and easy are these? I used some tomato sauce I made from the summer that was chunky and had onions, garlic, and fresh basil for the pizza sauce topping. I toasted the tops of the English Muffins with some olive oil, (just a dab) and then added the sauce after they toasted. I had frozen chicken tenders that were marinated, so I topped the pizza with these warmed chicken tenders added some onion and a mushroom. Heated the whole thing up, and the cheese melted perfectly while sitting atop this wonderful treat. Thanks so much bmcnichol~this was delicious!
