- preheat oven to 350.
- grease an 8x8 baking dish and sprinkle with ground almonds.
- crumble matzoh in a large bowl.
- add apple juice, eggs, and remaining ingredients, mix well.
- pour into baking dish, bake for 40-50 minutes until firm and brown.
This was an unusual, yet tasty dessert. This smelled like cinnamon bread baking and tasted like a nutty bread pudding. I really enjoyed the combination of fruits & nuts, although I left out the whole almonds. The warm bits of apricot were my favorite part. This was a little drier that I would have liked it, so next time I will add a tiny bit more juice - but this was still really great as is.
