This was very good. The dressing will do much more than 1 cucumber.. and that's great. Will try with tomatoes another time. Heated the dressing in the microwave. The dressing did not overpower the cucumbers. I preferred just dribbling the dressing over instead of stirring and marinating.
My guests and I loved this simple salad. The balsamic vinaigrette was lovely with the mustard, olive oil and fresh, finely cut rosemary. The rosemary lent a very special flavor and was not overpowered by the other strong flavors.
WAYYYYY to much dressing!
This recipe got a variety of ratings from my family - everything from 3 to 5 so I'll give it a solid 4. The one who gave it a 3 simply doesn't care for balsamic vinegar (I know - how weird is that?!) I added in sliced green onion and sliced radish which went nicely with all the flavours.

This is a new and different cucumber salad, and it is really good! The marinade smells so wonderful while it simmers. (I added a pinch of sugar to my marinade). I used regular (homegrown)cucumbers. Thanx for a great new cucumber salad. I'll fix this again.
This was a new way for me to make salad, too, and I'm so glad I tried it. Delicious and refreshing (I allowed the salad to marinate in the fridge for 2 hours before dinner). I will try this again, playing with the herbs as I think I would like it even more with oregano or marjoram.
