My variation on a yummy bar! After coming out of the food processor it might not look like it will form into bars, but once you start mushing it together it should come together nicely.

Directions

  1. Blend dates, almonds, peanuts and cinnamon in food processor for 2-3 minutes.
  2. Add oats, chocolate chips and pulse until they look incorporated.
  3. Dump everything on a piece of plastic wrap and cover with another piece of plastic wrap and mush it together.
  4. Use rolling pin to flatten and cut into desired size of bar with pizza cutter.

Perhaps because I used Medjool dates, the bars turned out a bit less solid than I'd expected, but wrapping them individually & keeping them in the fridge solved that problem, & they were very flavorful, much more so than the store-bought kind!
