I cook soups all the time. I find that if you will do a saute of all vegetables and meats together in as little oil/liquid as you can, and THEN add your liquid body you can really cut the total cooking time tremendously!
This was really terrific! Tasted just like enchiladas and was very easy to put together.
I made this in my crockpot. Last hour threw in the tortillas. It was very good. Next time I will shredd the chicken instead of leaving it chunky. The only thing I did was use low sodium broth. Very flavorful!!!!
this was great i added some black beans and corn . froze the left overs thanks so much
Loved IT! Great soup... however when I got to making it I ran out of Chili Powder, so I just doubled the paprika (used 1/4 tsp) and it still turned out great! Next time I'm going to try adding some corn and celery.
As my husband said "This is a keeper". We really enjoyed the soup and it was so easy to make. The only change I made was to add a can of black beans.

This is a new favorite! My husband and I loved it! It is easy to make, tastes wonderful, and reheats very well. I garnished it with sour cream, and also mixed in some fresh cilantro before serving. I'm thinking about serving it the next time we have company!
This soup does indeed taste like enchiladas. It is very easy to make and has a very good flavor. We enjoyed this as a nice change of pace from the usual soups.
