If you only ever try one soup in your life - make it this one! This was outstanding. I added a squeeze of chili sauce, about 200g peeled and deveined green prawns (shrimp) and used diced tomatoes - we don't have cans of stewed tomatoes on the Gold Coast. Thank you so much for posting this recipe - just loved it!

Excellent! Made tonight as directed (except for subbing chicken broth for beef) and added the chicken. While tasty on its own, what made the soup was the addition of the tortilla strips and cheese in the bottom of the bowl before adding the soup. Don't skip that part! It truly tasted like chicken enchiladas. Will make again. Thanks for posting!

Delicious flavor my family will continue to ask for! Super easy dinner too...I love this one - it goes into my keeper recipes! We made it on the spicy side (like we like it) and I served it with cheese, the corn strips and lime sour crema - YUM!!! Thanks for another great one, V!!

Very easy recipe with wonderful flavor. I used El Pato Mexican tomato sauce (which is extremely spicy) instead of the enchilada sauce because it is what I had on hand. I also used cheddar instead of jack. I think a dollop of sour cream and some sliced avocado would be nice with this. I am putting this in my keeper file for cold chilly days!

This was yummy! It was very quick and easy to put together. I did use Mexican-Style stewed tomatoes and colby-jack cheese because that is what I had on hand. I resisted the urge to use Doritos instead of the fried tortilla strips (to save time), and I'm glad that I used the tortilla strips. They really added to the enchilada flavor. Next time, I think I would like to try this recipe using green enchilada sauce because my family prefers it over the red. Also, I might like to add some cooked chicken, cilantro, etc. to it as well. My family enjoyed this soup very much. Thank you for sharing another great recipe for PAC Fall '06.
