I was looking for a quick dinner idea to use up some left over chicken and this dish was perfect. I followed the recipe exactly except I used green onions. What a wonderfully flavored dish that will be a frequent meal from now on. Served with a toss salad and our meal was complete....so easy!!!

This is a family favorite. I have made this with leftover turkey, chicken and pork. I have also used canned chicken and ground beef, all with excellent results.

I couldn't stop eating this. But I did have to do a few things differently. First I used a can of spanish rice, which had less rice than the box, so this cut my layers short. I only used two tortillas, to make two big layers. I sauted the onions with the ground turkey. I also added some Cayenne Pepper to the ground turkey as it browned. I used one jar of taco sauce for the topping. My DB thought it all came together pretty well. Will definately make again, the leftovers were fantastic.

This was pretty good, but not excellent - I used chicken, red and green enchilada sauce and black beans. Maybe I will try a different combination next time.

had a friend coming for lunch.. made this..so very very good.... she asked for the recipe..so I printed 1 for her..and 1 for me..nice thing was I sent half home with her..and I still have enough for lunch tomorrow OR luch tonight..so easy to put together... one thing 1 did that you did say..(I don't think) is before cutting I let it set for 5 minutes (give or take)...I found in my oven it was pretty near done after 25 minutes..so I turned off the oven & waited about 5 minutes more..smells great cooking too..

Made this for Friday night supper, had it again on Saturday for lunch. Great flavor, and very easy to prepare. I used canned chicken, whole wheat tortillas and a can of Las Palmas Enchilada sauce, because that is all I had on hand. I might add sliced green onions and black olives to the top layer next time. Thanks for posting.
