Emeril's restaurants make fabulous mai tais so I was happy to find this recipe on the foodnetwork.com.

  1. Fill a cocktail shaker half way with ice cubes. Add the remaining ingredients, except the cherries and shake until cold and frothy, about 30 to 45 seconds.
  2. Strain into 2 tall glasses with cracked ice and garnish each with 2 maraschino cherries and paper umbrellas.
  3. Serve immediately.

This was yummy, I used three different light rums - regular, pineapple & passionfruit. Probably could turn this into a yummy pina colada with a little coconut cream. (My DH also added some frozen pineapple chunks to his drink.)

YUM! Sweet and fruity, lovely red color. Not bad at all, really nice and smooth, with a kick if you don´t kill it with the ice. What is it I was missing in these? Just a little twist of almond, maybe?
