From of Course Emeril Live. The very Best low fat fried green tomatoes. Portions vary on amounts cooked.

  1. Cut the green tomatoes 1/4 thick slices.
  2. Soak in buttermilk at least 30-60 minutes.
  3. Mix equal parts flour, cornmeal.
  4. If you can find Masa Harina add 1/4 amount.
  5. Add salt pepper to taste.
  6. Preheat the oil to frying temperature.
  7. Dip the tomatoes from the buttermilk into the dry mix.
  8. Brown both sides, remove then put on a plate/rack to drain in a warm oven.
  9. Serve with Miracle Whip or mayonnaise.
