Thanks for sharing Lennie, I couldn't find it where I live anywhere so this was perfect. I used it in one of my PAC dishes, Hungry Man Pork Tenderloin by LondonKarma. It worked beautifully, I can't wait to try it on other meats.

I used this in Elmolvsu's Chili con Carne Chili con Carne and it worked excellent. Reduced it down to .25 of a jar. Thanks for posting a copycat for something not available in Australia.

A chili recipe I made last night called for some Essence. I did not have any and did a search and found this recipe. I did cut the recipe in half and added salt to my liking. My chili was great and I think I will try this on grilled meats. Thanks for posting.

This is a great blend. Makes everything you put it in taste great and special. I even put it in scramble eggs! I also add a good pinch to Hollandaise. Very easy to put together. If you like spice, try it. My husband bought a special small duck dish with lid from Cost Plus so he could have it on the table every meal.

Wonderful seasoning!!! Emeril Lagasse is one of the best Chefs. Helpful hints is my goal. Good cooks always season to taste with salt & black pepper - so eliminate it from this mixture so you can adjust your recipes to your own preference. I use this seasoning a lot for meat,fish, potatoes, casseroles, BBQ or what ever. Even with eliminating the salt & black pepper, this mixture makes a lot. For accuracy when using measuring spoons, I hold it over a paper plate and use the back side of a butter knife to slide across the top of spoon. Any excess from the measurement can easily be replaced back into spice container by bending plate & holding it over container like a funnel. Thank you Lennie for submitting this money saver. I love viewing recipes and Lennie has a great cookbook - check it out!!!

A very good seasoning. It really is. However, when i put enough of the mixture on for the spiciness I want... it is too salty. Cut down on the salt by at LEAST half. With all that salt... I have to use it too sparingly for my liking. But it doesn't stop me from sprinkling it on everything from chicken to fried potatos! Just cut down (or even omit) the salt and add that separately.

Excellent!!! Just a quick note to any canadians reading this. I live in Moose Jaw and have been able to find Emeril's spices in stores like Nutters and Old Fashioned Foods so you could try there.

Actually, this is the recipe for the rustic rub. Not that it isn't a good recipe. Caryn I have all the recipes also and you are correct.

I also use this and put it on fried shrimp, pork chops and it is wonderful as a dry rub on beercan (or beerbutt) chicken, whichever you prefer. Gloria
