We really thought this was good. I replaced the green pepper with red because that's what I had. This is a change up from my regular recipe for meatloaf and will be making it again.
I made this meatloaf exactly as written except I always sweat my onions and green peppers for meatloaf just enough to soften before adding to the meat mixture. Delightfully tasty flavors. We do not glaze our meatloaf with ketchup and the family declared it a keeper.
Anything I can make that my 6-year old son will eat is a winner in my book. This had wonderful flavor, and was enjoyed by the entire family (except my 3-year old son). I will definitely make this again!
Ok, so here is the deal: none of my girls like meatloaf. Whey they found out that was what we were having for supper, all I heard was moans and groans. However, once they started eating it - I had some apologies. They loved it. It just can't get better than that!
I would make/eat this again, but it wasn't the best meatloaf I have ever had. My kids did like it (Do you think smothering it in cheese had something to do with that?) but they even said they would rather have my ketchup frosted meatloaf next time.
This was wonderful even without the sauce. I didn't have milk today to make the sauce, but I will make it for leftovers. I used more ground beef than what was called for and threw the different seasonings in that were in the Paula Deens House Seasoning with out making up the batch. I also added a little extra of everything else to make up for the extra ground beef. If this is 5 stars without the sauce, it will probably be 10 with it. Thank you MarshaD!!!
