I made Ellie's seasoning blend and starting putting it into whatever I was making. This is one of the dishes. This is full of flavor. I made it with zucchini but this would also be great made with mushrooms, peppers, onions slices....
- 1⁄3 cup olive oil
- 1⁄3 cup wine vinegar
- 1⁄3 cup herb seasoning mix (I use Herb Seasoning)
- 1 -2 medium zucchini, halved and cut lengthwise into 4 slices
- Mix all into a ziplock bag and maninate 2 hours (less or more).
- Grill 2-3 minutes on each side.
Nice and healthy and fresh. The vinegar flavor was a little too much for me when served warm, but that being said, I think the leftovers will work GREAT in a pasta salad. Thanks for turning me onto the herb seasoning. . .great way to use fresh summer herbs! Made for Veggie Swap July 2010.
Loved these zucchini. They were easy to make and loved being able to start them ahead of time, and then just pulling out of the marinate and cooking.
Oh Rita, these are so delicious, easy to prepare. Love Ellie's Herb Seasoning, adding the vinegar and olive oil to it really makes a great marinate for the Zucchini. I also used some Magda squash, everything was yummy. Thank you for another great recipe.
