Elk Swiss Steak

ingredients
- 2 lbs elk steaks
- 1⁄4 cup flour
- 3 teaspoons butter
- 1 onion, sliced
- 2 cups fresh mushrooms
- 1 (15 ounce) can tomato sauce
- 2 beef bouillon cubes, dissolved in 3 t water
- 1 teaspoon salt
- 1 teaspoon garlic powder
- 1⁄2 teaspoon pepper
directions
- Cut elk steak in serving pieces.
- Sprinkle lightly with flour.
- Fry in hot butter, browning both sides.
- Put in a baking pan.
- Brown onions and mushrooms in same pan as the steak.
- Add to steak in baking pan.
- Combine remaining ingredients and pour over the steak.
- Cover and bake at 350F degrees for 1 1/2 hours.

Yum-de-yum, yum, yum! We had some elk steaks given to us (now I wish I had more!) and my hubby and decided to try this out. It's great - meaty, saucy, spicy, flavorful... falls apart like a pot roast almost. (If you never had elk before, it's not terribly "gamey", but the tomatoes in this make it even less "gamey"!) Thanks for sharing!

I made this recipe yesterday and it was fantastic. Everyone loved it. I read the reviews and took some suggestions from there - I used jarred spaghetti sauce, seasoned bread crumbs instead of the flour, browned in oil/butter, added some chopped green pepper and celery. I'm sure it would have been just as great if I hadn't changed a thing, but I like to experiment sometimes if I have the ingredients. I will make this again and again, although I might have to use beef, since we don't come into elk meat that often. Thank you for the recipe!

After DH and I moved away from the farm, and to the city...I haven't done as much cooking and very little canning. But I do come to Zaar and look for new recipes once in a while. I'm still cooking Zaar!!
I like to play at Facebook, with my family and friends. A lot of my Zaar friends are there!! Yay! It's a good way to keep in touch.
We travel more. We're looking at the European trips now. Hope to go in the springtime. I really want to see London, I think I lived there in a past life, I've been obsessed with it since I was 10 years old!!
