Excellent! I was able to go into work late today, so I took advantage of the time to sit down and enjoy this wonderful breakfast! I did use regular chorizo instead of vegetarian, because I already had some in my fridge, but otherwise followed the recipe. Now I'm so full, I don't need to eat lunch! Thanks for sharing!
Never had scrambled egg tostadas! These were great. I used a quarter of the oil to fry the tortillas (I doubled the recipe and used 5) and skipped adding any more for the soy chorizo, since it has plenty of oil in it (Trader Joe's brand is a really yummy product). This could be breakfast or dinner!
Great Sunday breakfast. I used regular veggie sausage patties and some Mexican spice. I actually made a half serving and found that to be perfect for me with a slice of toast on the side with Mexican fair trade (organic) coffee. Well, I can honestly say that I'm one contented woman, this is delicious. :D

Thought I was finished in Mexico, until I saw this recipe....Wow Sharon was this good. So comforting, so much flavor and the textures were excellent. Loved the combination of flavors in the eggs and in the salsa. Not usually a huge fan of salsa, but I loved this one. The crispiness of the tortillia was a perfect base for the eggs and salsa. I couldn't find vegetarian soy chorizo, so I left it out and didn't miss it one bit. Used small grape tomatoes which I halved and medium size flour tortillas. This worked so well, it tasted incredible. Thank you for a wonderful breakfast, which I will be making again often. I have placed this in my Favorites Cookbook for 2012, Kudos...
