Eintopt means "one pot" and this is a variation of the many kinds made in Germany. I generally make just half this amount. I use turkey smoked sausage and, as frozen French-cut green beans are hard to find here, I use canned beans. I also add a bit of fines herbes.

This is a great soup. made as posted for 4 servings but skipped the Maggi Sauce (never used it and checked on line - The sodium count is 1480 gr per tablespoon and lots of chemical ingredients - too scary for me personally. Another reviewer mentioned a smoky taste so I added a bit of snoked paprika. This had a full "earthy" taste which I loved. Thanks for posting Julie. Made for I Recommend Tag.

  1. Bring the water to a boil.
  2. Add carrots, celery, and onion. Cook until tender.
  3. Add sausage, and potatoes. Cook until potatoes are tender.
  4. Add green beans. Cook 30 min longer.
  5. Season to taste with salt, pepper, Maggi seasoning or herbs of your choice.
