Elegant Chicken Stew

  • In a heavy dutch oven with a lid, brown chicken pieces in butter.
  • Season on all sides with salt, pepper, thyme and tarragon.
  • Set aside.
  • Deglaze pan with 1 cup wine.
  • Dissolve cornstarch in remaining 1/3 cup of wine.
  • Add to pan.
  • Return chicken to pan with onions, carrots,celery and potatoes.
  • Stir lightly to coat.
  • Cover and simmer 20 minutes.
  • Add peas and mushrooms.
  • Continue to cook gently until potatoes are tender.
  • Remove chicken, check to make sure no pink juices are running from them.
  • Stir gravy in pan, adjust seasoning if needed.
  • Serve with vegetables and gravy.

  1. Fixed this yesterday for Mother's Day and it was wonderful. I used sweet vermouth for the wine, because I love the richness it gives to a dish. I didn't change anything else and it was a dish nice enough for company. Thanks, Carole

I live in Western New York, on Lake Ontario. Great cultural, food, and touring area. For fun, we go "wandering" to the Finger Lakes area for lunch and "junk hunts". I retired after 15 years as a travel agent, but I'm very busy with family and friends. Favorite cookbook: 'American Century' by Jean Anderson. Great reference book! I love to read cookbooks, and can't pass up a chance to get "just one more". I now work part time for the Canadian American Transportation System, also known as the "Fast Ferry", or "The Breeze" that goes between Rochester NY and Toronto. It's a gorgeous ship, and a cool job!
