My parents gave a Christmas party for about 30 people with a buffet dinner (followed by charades) every year for many years. My mother often served this dish (multiplied) because it was relatively easy and people liked it so much.

What a good use of some leftover chicken breasts I had on hand. I liked the idea of chicken salad, but I wanted a hot dish. This fit the bill. I didn't have water chestnuts so I threw in some mushrooms. I cut down on the mayo a little bit. I also deleated the olives (hubby does not like.) It was super easy to follow, very quick and quite tasty.

  1. Mix the chicken through the mayonnaise and put into a shallow baking pan (or pans).
  2. Top with the corn flakes and cheddar cheese.
  3. Bake at 450°F for 10-15 minutes.
