A bit of a sophisticated smoothie I found in a smoothies & juices book I bought. I'm writing the recipe as written but I made mine with canned pears so skipped the first step and just threw eveything in the blender, was quite yummy, even toddler DD enjoyed it.

  1. Place pears, elderflowers, lemon zest, suagr & water in a saucepan, cover tightly and simmer until the pears are very soft, allow to cool.
  2. Discard the elderflowers & lemon zest and process the pears, cooking liquid & milk in a blender until smooth.
