A bit of a sophisticated smoothie I found in a smoothies & juices book I bought. I'm writing the recipe as written but I made mine with canned pears so skipped the first step and just threw eveything in the blender, was quite yummy, even toddler DD enjoyed it.
- 4 small firm pears, peeled & cored
- 2 heads elderberry flowers (or a dash or cordial)
- 1 strip lemon zest
- 1 tablespoon brown sugar
- 4 tablespoons water
- 200 ml skim milk
- Place pears, elderflowers, lemon zest, suagr & water in a saucepan, cover tightly and simmer until the pears are very soft, allow to cool.
- Discard the elderflowers & lemon zest and process the pears, cooking liquid & milk in a blender until smooth.
