Egyptian Molokhiya / Molukhia - a Quick & Tasty Dish

Molokhiya is also known as Jews Mallow & can be bought in frozen packs from Middle Eastern grocers or if you are in North Africa you will probably have access to the fresh version ;) Molokhiya is often compared to spinach but the tastes are really very different. This dish is very quick to make & eaten with flat bread for a tasty meal.

This is good for a first try of cooking and eating molokhiya. DH brought home a bag of the fresh leaves (They are sold some places in Canada!) which I rinsed, patted dry as best I could and lay to dry completely on a large cloth before chopping a bit and cooking, a tip I found on another site to reduce the mucilaginousness of the final dish. I used sea salt, freshly ground coriander plus the rest of the ingredients and served it over a Middle Eastern meat spiced rice, with yogurt. I will most probably use this recipe again.

  1. Put the butter in a pan & on a low heat, cook the Molokhiya from frozen until heated through.
  2. Add the minced garlic, salt & coriander. Cook for a couple more minutes then serve with fresh flat bread / toasted pita etc. DO NOT ALLOW TO BOIL.
