Eggs on Potato Chips

"I had a few half eaten bags of plain potato chips left over from having my friends sleep over and put this together the next morning for breakfast. It recieved rave reviews. I added some maple flavoered bacon on the side."

  • In a non-stick pan with a tight fitting lid. Sauté chopped onion until soft. Stir in minced garlic, minced chilies, add chopped cilantro. Crumble in potato chips, tossing to combine. Make 4 nests (indents) on the surface of the chip mixture. Crack an egg into each indentation. Pour water down the side of the mixture and pan to generate steam. Cover tightly; reduce heat to low, let eggs cook until set. 6-8 minutes.
