  • Fry the diced onion with the margarine, then add the flour, salt and the broth.
  • Cook this for 15 minutes.
  • Spice it with the mustard and some sugar.
  • Put the shelled eggs on a deep plate and pour the hot mustard sauce over them.

  3. This was very tasty! Annoyingly, I completely forgot the onion, so I topped with some sliced green onion. Next time I will remember the onion though! I only wanted enough for two eggs but had some trouble converting from metric to US since the site's built-in unit converter does not work at the moment. I ended up using 1 Tbsp butter, 2 Tbsp flour, and about 3/4 c broth and had enough sauce for four eggs (fortunately I had boiled four!) I used a German mustard, Loewensenf, for the mustard. Looking forward to trying again *with* the onion! Thanks for sharing :)
     
  4. This was so easy to make and a really nice change from our usual eggs and bacon breakfast. I made exactly as directed. I boiled the eggs the night before to make it even easier the next day. We really enjoyed this with a slice of toast and hot coffee. Made for ZWT #6

I live in Knoxville, TN with DH, my beautiful son, and the most spoiled cat on the planet! I grew up in Cincinnati and landed in TN by way of Bloomington, IN and Santa Fe, NM. Needless to say, it's been a long, strange trip!! To explain the name: I was veg for 11 years, vegan for 1. In the last year or so I started eating poultry and fish again, but my brother-in-law's nickname for me (smelly vegetarian) has always stuck.
