Eggs in Muffin Cups

"This is a neat breakfast dish that my kids called home-grown egg McMuffins. It eats like a muffin and is a complete breakfast."

  • Preheat oven to 350 degrees Fahrenheit.
  • Grease muffin cups.
  • Fry bacon until crisp. Allow bacon to cool.
  • Butter bread slices with melted butter.
  • Tear bread into pieces and place in muffin cups.
  • Place crumbled bacon on top, then eggs on top that.
  • Drizzle a bit of bacon drippings on top.
  • Bake aproximately 15 minutes until eggs are set, or a bit longer if you liked hard cooked eggs.
  • Remove from oven and serve hot or cooled a bit.

  3. GREAT recipe!! I did make a # of changes though. (I always make changes--LOL) I used a dozen eggs. I used turkey bacon cooked in the microwave. I put a little provolone cheese on top. I also cooked the eggs ahead of time. (My husband has to have them VERY well done) This could have been a disaster as I realized too late that there would be nothing holding everything together!!! (next time I'll cook half of the eggs ahead of time) I also cooked them for 20 minutes--and when the cheese didn't brown a little on top--I turned the temperature up to 400 degrees. They came out great. They were a BIG hit with the kids!!! Not as big with hubby--but he did at least like them enough to eat them!!! So THANKS for the great idea!!! :)
     
  4. I have tried this recipe in every way suggested in the reviews. My favorite is cutting a circle out of the bread with a cookie cutter and soaking that in the milk. I tried both the muffin tins and the ramikins and found the ramikins worked better. I always use a couple of dashes of Louisiana hot sauce on top of the eggs to spice things up a bit.
     
  5. DGS and DGD spent the night last night and this morning, we made these. We buttered the bread, then used a large biscuit cutter to cut the circle and just placed these in the muffin pan, we pushed them in to fit, then I partially cooked the eggs, added the bacon and placed in each egg cup to bake. We had fun and they were good. Thanks!

  1. Awesome breakfast or brunch dish! So easy to do. I did make some alterations. I used a muffin tin that makes 12 muffins. For half the muffins, I used precooked bacon. For the other half, I used some browned sausage instead of bacon. I also sprinkled grated cheddar cheese on top of the bacon or sausage. I beat 10 eggs slightly and added some Lawry's Seasoned Salt to them and then poured the eggs into 10 of the cups. Since I was experimenting, in two of the cups I just broke an egg on top to make those two more like Egg McMuffins. All the different variations were delicious and my family had a hard time deciding which way they like them best! We all loved the way you can just eat them like muffins! Thanks, angelfan, for the inspiration for a new family favorite!!
     
  2. I used ramekins instead of a muffin tin. I used cheese instead of bacon. These were fast and very easy to make and uses inredients I always have. I cooked mine about 13 minutes. Thanks for sharing your recipe angelfan!

I grew up on a farm and learned to cook from scratch. By age 9 I could follow a recipe.So I have been cookng for a lot of years now. Besides cooking I enjoy bible study, church, crafts, collecting rings and Christmas ornaments, reading, collecting angels and visiting with friends via E mail. Have been married for over 30years and have four children, two of which are handicapped. The kids are all grown now and I am getting use to cooking smaller portions. Recently found out my husband has non-hodgkins-lymphomia. He will start treatment soon. Learning more about healthy eating and healthy cooking.
