This combination is one of my DH's favorites so I was excited to make it for him. We had it for dinner tonight, he works nights so dinner is his breakfast. It was a huge success and requested to be a regular around here. :-) SO easy and tasty I thank you for sharing!!

I'm almost embarrassed to say this recipe has been on my "want to make list" for over 6 years -- but finally, I made them this morning. When I first saw the recipe and photo, I thought "oh, how cute." The cups are adorable and the cuteness factor rates a perfect 10! This is a great idea for preparing eggs, and they taste so good. They couldn't be easier to make and look very special on the breakfast table. The paprika it a colorful finishing touch for serving and I wouldn't skip that spice. Instead of salt/pepper, I sprinkled the eggs with Rita~'s Green Herb Seasoned Salt (Green Herb Seasoned Salt). This recipe is a gem, thank you.

Today was the day to try these - my son wanted eggs for lunch, my daughter wanted bologna. I remembered having this recipe in my cookbook so we made these as a compromise. My son did get ahead of me making the cups, so our bologna wasn't pre-fried, but paired with a bagel and grapes these made a fun, well-balanced lunch.

I was skeptical about these, because I still have memories about all of those bologna sandwiches my mom made me eat growing up. But my kids love bologna, so I gave it a shot. These are easy, good and they pop right out of the muffin tins. My kids say this is a keeper recipe and I think that I can even tolerate bologna in this way. Thanks for sharing.

I must admit I was surprised how good this was. I used thick-sliced bologna (pylsur) from a log here in Iceland, lined ramekins w/it & then filled w/a egg/cheese scramble b4 baking. My DH loved them! Thx for another new prepare ahead b'fast option.

Easy recipe that looks good and tastes equally good. I over cooked my eggs a bit next time it will be exactly 15 minutes. This recipe would be great on a brunch buffet, the cups sit all on their own and would look lovely on a platter Thanks Mercy

Pretty good. The top part of the balogna tasted just like bacon. :) I will look forward to making this again. I even gave this recipe to my friend.
