This is such a good breakfast dish. It makes me feel "ritzy". But seriously, it is very good. Make each serving the same way. This is ONE serving.

Ingredients Nutrition

  1. Poach egg.
  2. Lightly toast English muffin half.
  3. Top with ham slice, (tucking square corners under to conform to round muffin).
  4. Top ham with poached egg.
  5. Cover all with 3 tablespoons Hollandaise Sauce.(See recipe #25113)for (Quicky Hollandaise Sauce).
  6. Sprinkle with paprika (if desired).

Yummy! I love eggs benedict and this was a nice one. I used Canadian Bacon instead of ham and hollandaise made from a mix. Simple and good. Thanks Darlene Summers for a nice treat. Made for Chef Alphabet Soup Tag.

This recipe was simple and it held up very well. Thank you for posting this!

I make this same recipe often, only I don't add any paprika and I use a lot less sauce on top of each muffin, probably only 1 Tbsp. I either make my own sauce, or I mix up a package of Knorr Hollandaise sauce. A great way to use up some leftover holiday ham.
