      We love eggs benedict and my grandson begs for it often. This was a nice version that we totally enjoyed. I used Canadian bacon rather than the ham. Thanks for sharing. Made for Name That Ingredient Tag.

      I have never had eggs benedict so my hubbie made this for me. It was pretty yummy! It is also pretty filling also:)

      Eggs Benedict is one of my favorite choices for breakfast when I go out to eat for breakfast. I have never made it myself, and now I don't know why I waited so long to try to make this breakfast. This was super easy and fast to make and tasted great. The only change I made was to use Canadian bacon instead of ham. I also cracked the egg into a small cup and then slid the egg into the simmering water. Thank you so much for this wonderful recipe, Amanda. I will be making this often from now on.

      The reason I choose this for Aussie/kiwi recipe swap is the hollandaise sauce. Years ago I made a classic cooked hollandaise for some vegetables. It was very good but I felt that it was an awful lot of last minute work before the meal. I wanted to try this way. It was pretty easy, but I did learn that the melted butter has to be really hot and bubbly or the sauce won't thicken properly. Because of personal preference I think next time I make this I will cut the lemon juice in half. The lemon flavor was a little strong for my family's taste. All in all a very good recipe. Good for breakfast or lunch. Will be trying this again. Thanks for a niw way to make hollandaise sauce.
