  1. slice and salt eggplant- let sit for about 20 minutes.
  2. in the mean time, make 1 cup of rice and saute the onion.
  3. Put sauce, some rice, and onion in the baking dish. Once eggplant is done, put a layer of eggplant down. Top each eggplant slice with a slice of cheese. Repeat layers- baked uncovered for 20 minutes.

This is a recipe that gives more than the sum of it's parts. A few simple ingredients add up to a lot of flavor and texture. If you enjoy eggplant you'll adore this. I rinsed the salt from the eggplant before using it and then patted the slices dry with paper towels.
