  • Slice eggplant lengthwise, aps 1/4" thick.
  • Coat slices in flour, then dip in beaten egg.
  • Fry in Olive Oil until browned and tender.
  • Make layers in a casserole dish with eggplant, then sauce, then mozzarella.
  • Top with parmesan cheese.
  • Bake, uncovered @ 350 degrees for 40 minutes.
