Sinfully high in calories, but delicious.

Ingredients Nutrition


  1. Slice eggplant lengthwise, aps 1/4" thick.
  2. Coat slices in flour, then dip in beaten egg.
  3. Fry in Olive Oil until browned and tender.
  4. Make layers in a casserole dish with eggplant, then sauce, then mozzarella.
  5. Top with parmesan cheese.
  6. Bake, uncovered @ 350 degrees for 40 minutes.
