Tastewise this is awesome. However, the dish was too greasy for me due to the eggplant soaking up too much oil when frying. I will definitely make this again and will brush the eggplant with olive oil and bake it. I am sure that will solve the problem and make for a healthier dish. Good side; easy to construct. I used more Parma Cheese than 2 Tbs. One photo shows the unbaked gratin. Made for the Mediterranean event in Cooking Photos.
This is a wonderful recipie. I doubled this and used a rectangular baking dish. Fabulous flavor! Leftovers were used in some nice Italian bread eaten cold and were equally as delicious. Recommend this recipie for all eggplant lovers.
Very delicious! Wonderful using fresh eggplant from my garden. I do not own any gratin dishes, and so instead used an 8x8" casserole dish and doubled the recipe. Worked perfectly. Thanks!
