I took my favorite pancake recipe and made it festive by replacing the buttermilk with eggnog. So if you don't want the extra sugar in there, just put the buttermilk back in. It's delightful that way too!
- 1 cup eggnog
- 1 egg
- 1 tablespoon olive oil
- 3⁄4 cup cottage cheese (for protein) (optional)
- 1 cup whole wheat flour
- 3⁄4 teaspoon baking soda
- 1⁄2 teaspoon salt
- Mix eggnog, egg, oil, and cottage cheese together. Combine flour, soda, and salt and add to eggnog mixture. Cook on hot skillet.
- For waffles put an additional 1 Tablespoon oil into the mixture.
