This is great for people who love french toast but hate eggs. *VEGAN* I like to add nutmeg in with the cinnamon.
- 3 ripe bananas
- 1 cup soymilk
- 2 tablespoons molasses or 2 tablespoons maple syrup
- 1⁄4 teaspoon cinnamon
- 7 slices whole wheat bread
- 2 teaspoons oil
- Mash bananas in a bowl.
- Add soy milk, molasses or maple syrup, and cinnamon.
- Stir well.
- Soak bread slices in mixture. Fry in lightly oiled skillet. Lightly brown both sides.
- Top with your usual french toast toppings.
I see why some people were having problems with this-- if you leave too much of the mixture on the bread, it makes a huge mess and never really cooks right. try soaking and scraping excess liquid off the bread before putting it in the pan- this seemed to make it cook better and more like regular french toast
I had such high hopes for this recipe since I've been dying to give my DD french toast w/o eggs (she's allergic). It started off great. I blended the mixture in my blender and soaked the bread. I expected it to be much soggier when I pulled the bread from the mixture, but it was nice and firm. I heated the oil and began frying over med heat. The edges were getting brown, but the center wasn't. In fact, it was becoming soggy, and when it was time to turn, it was sticky, soggy, nasty and hard to flip. Once flipped, the center puffed up so the underside never browned. I pitched those two pieces into the garbage and pulled out my griddle. I assumed the oil was making it soggy since it wasn't soggy going into the pan. Didn't matter, it became soggy on the griddle too, and the centers puffed up when you flipped them so the underside never browned again. If you like eating soggy wet bread that tastes like pureed bananas, this is the recipe for you. I gave it to my 2 yo and she even said, "mommy, my sandwich bad." Sorry, maybe I am doing something wrong, but this recipe didn't work for me.
