You can cook the ingredients one day and make cake the next,if you wish.Just refrigerate until ready to add soda & flour.When this cake is covered & allowed to store for a couple days,it becomes moist ad delicious.Your house will smell wonderful!
- 2 cups brown sugar
- 2 cups hot water
- 1 teaspoon salt
- 2 teaspoons cinnamon
- 4 tablespoons shortening
- 1 1⁄2 cups raisins
- 1⁄2 teaspoon clove
- 3 cups flour
- Place all in a saucepan and boil for 5 minutes.
- Add 2 teaspoons soda,dissolved in 1 tablespoons lukewarm water.
- Add flour.
- Bake 1 1/2 hours in loaf pan at 350*.
Surprisingly tasty! Great for people on strict diets or who just want to eat healthy. Nursing mothers who need to eliminate dairy can have their cake and eat it too! So moist; hard to eat just one piece. Simple to make.
I just made this for my Father's Day and can't believe how fab it is. Yet it's so simple too. I added some cardoman seeds and used sunflower oil instead of shortening. It's a firm favourite!
Three years later I made this out of my daughter's request (now 4 yrs old) to make something tasty but not use up all of our ingredients. I recalled this and made it with her today. Used all organic ingredients and she added organic bitter sweet chocolate bits on her half of the cake. She loved it and I am glad I remembered this. This cake is super to make. Very easy, doesnt use up lots of ingredients and if you sub canola oil for shortening i think it could be vegan? Great recipe with great taste and great texture; not too dense but not so spongy either. Thanks for sharing; we will make this again and make it into muffins.
