      We really enjoyed this easy banana bread. I followed the recipe except for not having applesauce, so I substituted yogurt and reduced the butter, and added a teaspoon of ground mixed "tea spices", to give it a hint of cardomom, ginger, pepper and so on. I'm looking forward to trying it again with chocolate chips.

      I made quite a few changes to this recipe, but it adapted well and we really enjoyed it. I used 1/2 cup whole wheat flour and the rest whole wheat pastry flour. I used a little less then 1/2 cup splenda brown for the sugar, 4 medium sized bananas, and 2 tbsp. low fat butter. I did add 1/2 cup chopped pecans and 1/2 cup chocolate chips. Then I made it all into muffins! 12 regular size and 18 minis were all devoured here in a very short amount of time! I baked these for about 12 minutes. Thanks. A great way to use up my bananas when I was out of eggs!
