Oh yum, this is a great, creamy and flavourful eggsalad recipe! We all loved it! I, too, scaled the recipe down to serve 2 and it was gone in a flash...
Instead of all mayonnaise, I used some yogurt, which worked out really well. The curry was a great touch and Ill surely make this again.

I scaled this back using 2 eggs, 1 teaspoon dry mustard (Keens), 1/4 teaspoon hot madrass curry and 2 teaspoons of whole egg mayonnaise and made into 2 egg sandwiches using wholemeal/wholegrain bread and the DM and DS really enjoyed these for lunch. I did have a little taste and I loved the addition of the dry mustard with the curry powder and neither were overpowering. Thank you Secret Agent, made for Bargain Basement.
