This is a family recipe, they are delicious! You can't eat just one.

  1. In a skillet cook the pork until no pink remains.
  2. Drain of grease and set aside in a bowl.
  3. Add the beaten egg to the pork, along with chopped green onions, bean sprouts, minced garlic, salt and pepper.
  4. Mix all together.
  5. Add the softened bean thread noodles and the soy sauce and fish sauce, if using.
  6. I use about 2 teaspoons of soy and just a dash of fish sauce.
  7. It depends on your taste.
  8. Mix all together.
  9. Place a heaping tablespoon of meat mix in the wrapper, close to the edge.
  10. Wrap as directed on package.
  11. Deep fry in Peanut oil or vegetable oil until golden brown.

This was super yummy... I messed up a little bit becasue i made the egg rolls kinda early and then tried to fry it later in the evening and it started to fall apart so i would say dont roll them till your ready to fry. i also added carrots and some cabbage as well and used gound beef instead of pork. turned out great. I even added some red chilli powder to make it some what spicy. great recipe thank you jb4

These were great. I've always made eggrolls with just meat and vegetables and my eggrolls tend to be soggy when they cool. The addition of the noodles to this recipe made the filling a bit drier which in turn made the eggrolls much crispier. I used about 1/4 of a package of noodles and added a grated carrot to the filling. I also omitted the fish sauce and added oyster sauce and a little sesame oil. Thanks for sharing your family recipe!
