I had this for lunch today on rye bread and it was delicious! I confess, I used the REAL mayonaisse (as I have developed a preference for it). I mashed half the egg and cut the remainder up. The mustard powder adds a nice zing to the tastebuds and is a nice touch that I will con't to use. Made for I Recommend Tag-Feb'10.

A wonderful combination of flavors and so easy to put together. I was home working, and I felt the "need" to gather eggs, and make some great tasting egg salad. I found this recipe and I am so glad I did!I followed this exactly, even using Miracle Whip of which, I had a small jar just waiting to be used. The green onions used here were a perfect compliment for this egg salad and tasted so perfectly! I served this on whole grain "white" bread, so you had the look of soft white bread, but had the goodness of whole grain. I also left my eggs in larger chunks, so the little green onions and Miracle Whip stuck perfectly to the egg. Wonderful! Thank you Chef Dee~Made for *I Recommend* tag game, Fall 2008

Without a doubt my husband's favorite foods in the world, hard boiled eggs, green onions, miracle whip, a little dry mustard and salt and pepper. He would give it a 10 star rating, the miracle whip and mustard and salt and pepper make this sandwich delicious!!! I use this same exact recipe except for the bread for my potato salad with the addition of potatoes of course. Thanks for posting, the recipes that are simple and I use all the time I never post and I am certainly glad you do.!

I made a few changes -- and I hate when people rate a recipe after making changes -- but it ended up being the best egg salad I've ever made and this recipe definitely gets the credit, even though I made the changes. Here they are: First, I doubled the recipe, then I used Best Foods full fat mayo instead of Miracle Whip. To make up for the loss of sweetness, I added a couple of tablespoons of my sweet homemade zucchini relish. I used only one green onion from my garden because it was huge(!) and even that may have been too much. And I used about a tablespoon of prepared horseradish mustard instead of dry mustard. I did not add any salt and pepper -- it came out absolutely delicious without it. Thanks for a great recipe. I never would have thought of using green onions in egg salad.

Pretty good...it needed a tad more mayo in my opinion and was out of green onions so used some onion powder and a dash of paprika.

Made the full quantity I could easily have made 3 generous sandwiches out of the mix (the DM has claimed the left overs for tomorrows lunch or for breakfast on toast). We both thoroughly enjoyed, thank you Chef Dee, made for I Recommend tag game and recommended by Color Guard Mom.

Made for the I Recommend Game. I've never cared for egg salad, but my husband loves it. I was out of Miracle Whip so I used Hellman's instead and also used a tad more mustard powder. I was so surprised that I actually liked this too. Finally a recipe that isn't bland and my hubby and I can both enjoy.

Thank you. My mother who won't eat very much because she has heart issues actually ate all of this and sade it was the best egg salad she ever has eaten. And she is a picky eater!

I hadn't had an egg salad sandwich in years,,,this is as great as |I remembered them. I took Emilee's suggestion and used a spicy brown mustard like my granny used. Thanks for sharing Chef Dee ! I will certainly have this on my menue more often now that I have such a great recipe.

I made this for a roadtrip; I put the egg salad on bread and then threw it in the cooler. We added condiments and baby spinach right before we ate them. These were pretty good (my first attempt at egg salad), but my male counterparts thought they were a little bland. I added spicy mustard to the sandwiches and I thought they were great... after all, there were no survivors by the end of the trip! ---UPDATE--- I remade this with more green onions, s&p, and mustard. I also added a bit of spicy brown mustard and it was AWESOME!!!

Simple and delicious describes this perfectly. It's simple, but not "plain" and boring. There's just the right ingredients to make it tasty. I used real mayo rather than Miracle Whip, but made no other changes. Thanx for posting this lovely egg salad!
