I just made this recipes. The dijon mustard makes this recipes. It's great for a light meal and good for lunch.
We made this for vacation to eat in the camper while driving. It was very good and the family agrred, the best egg salad we have had. thank you so much for posting, we loved it.
Made as directed minus the celery. I think the dijon overpowers the salad. I will try it again with regular mustard. Thanks for sharing.
This was very good. I added a few extra spices to the mix and used a beer mustard instead of dijon & shallots instead of onion. I did enjoy it with my low carb bread which meant that i had a total of 26 carb for my lunch. You could easily eat this on its' own without the bread as well.

This was a nice egg salad. I added raw pumpkin and sunflower seeds which added complex carbs, but also good fats we needed. I didn't have celery, so I added celery seeds. Also, we put spoonfuls of the salad in lettuce leafs and ate like lettuce wraps. It tasted great and cut a lot of carbs we would have used. Your recipe was so good, I Didn't miss the bread at all. Thanks!

I had just hard boiled 8 eggs when I went looking for a recipe for egg salad and came across this one. I put the celery in the food processor so it would be chopped fine. I did add just agout a tbls. of relish, and added about 10 chopped green olives. Thanks WJ!
Good, basic egg salad. I used both the celery and the onion. Next time I might omit the onion, although the flavor was fine. (I tend to eat egg salad for breakfast ...)
