Egg Noodle Mexican Casserole

"This is one our favorite Mexican Casseroles."

• Serves: 8

ingredients

• 453.59 g ground beef
• 425.24 g can sweet corn, drained
• 236.59 ml mild chunky salsa
• 828.06 ml cooked egg noodles
• 432.33 g can kidney beans, drained and rinsed
• 59.14 ml taco sauce
• 35.43 g package taco seasoning mix
• 118.29 ml tomato sauce
• 473.18 ml shredded cheddar cheese

directions

1. Preheat oven to 325 degrees F (165 degrees C).
2. In a skillet over medium heat, cook the ground beef until brown; drain.
3. In a 9x13 inch baking dish combine the beef, corn, salsa, cooked noodles, beans, taco sauce, seasoning mix and tomato sauce.
4. Bake in the oven for 30 minutes, or until cooked through. Add cheddar cheese to top and brown 5 minutes or until cheese is melted.

I did not get this made during ZWT5. So I decided to make it for lunch today. I'm glad I did because it was really easy to make. I used Recipe #135642 and left out the taco sauce because I wanted to use the rest of the 8 oz can of tomato sauce. Everyone gave it 5 stars. I will be making this again.

Made for supper tonight and loved how easy it is to put this casserole together. I used ground round and kluski noodles that I cooked until just tender. This is very tasty but we werent to sure about the flavor of the beans with the noodles. Next time I think I would use half the can of beans and mash them up a bit. This was good! It seemed dry to me so I added a whole 8 oz can of tomato sauce, and some extra salsa, but then I noticed I used the whole package of noodles! Ooops...still was great!!! Will make again.
