I've been making these since my grown kids went to elementary school (a looong time) and love them! I've never added water to the egg, though. I also coat the bowl with a non-stick spray and microwave for 60 seconds. You could use a slim slice of deli ham instead of bacon, that's delicious, too, just add light mayo in place of the butter. I've been wondering why nobody else ever thought of it before!
This was awesome. I have never cooked an egg in the microwave but it tasted so good. I make it easy and usually use a couple slices of deli ham instead of bacon. I also butter the muffin. This was an awesome easy recipe. Thanks.
Yummo. Quick and tasty meal when in a rush. Thanks!
I have been making these for years.I usually add a sausage round to the combination also.Delicious!
Wonderful! less dishes to clean, and soooooo much less money to spend at MickeyD's. I added a bit of sausage, salt and pepper. I think next time I won't mix up the yolk so much, it will be more like a poached egg. Thank you for helping me spend less money by posting this recipe!
My family loved these! My daughter liked it so much she asked for one for lunch too. I vacuumed sealed and froze several to keep on hand for quick breakfasts on the go.
This is a quick, easy and healthy breakfast. With a 1 point muffing and laughing cow cheese - this is a 4 point breakfast. Add bacon and it is only 5. A great tasting breakfast bargain that is healthy and easy.
FANTASTIC, easy prep, hardly no dishes, quick breakfast fix! Will make again and again!
Mixed beaten egg (plus the tablespoon of water) with 1 slice of Boar's Head deli ham torn in small pieces. Cooked in microwave for 1 1/2 minutes on high. Placed on toasted English muffin. Bottom slice of muffin had mayo spread thinly. The top portion of egg mixture was covered slightly with Classico Traditional Basil Pesto spread. Yummy! Thanks for recipe.
This was really good! I took Laura's suggestion and topped it with mayo & mustard & I must agree- better than McDonalds!
