A friend of mine at work seen this in a cooking magazine and hassled me for a couple weekds to make them, I finally gave in. Sorry I don't know what magazine because it was hers and I really just looked at the picture.
- Beat the eggs, and scramble fry them, top with cheese.
- Meanwhile, toast the english muffin and butter. And heat the ham in a frying pan.
- To serve, put the english muffin halves on a plate and top with ham, and top with egg.
- Serve any kind of side, hashbrowns or rice.
This was a quick and easy lunch for me today. I used deli ham and since the slices are wafer thin, I used two slices and instead of cutting them into fours I just folded them up. Loved the grated cheese on top.
