- 3 cups chicken broth
- 1 teaspoon salt
- 1 dash white pepper
- 1 medium green onion, chopped (with top)
- 2 eggs, slightly beaten
- Heat chicken broth, salt, and white pepper to boiling in a 2-quart saucepan.
- Stir green onions into eggs.
- Pour egg mixture slowly into broth, stirring constantly with fork until egg forms shreds.
- Makes about 3 cups deb

Very easy and quick to make. The only thing I changed was to add the green onion after the eggs formed. I give it five stars. :o)
Tasted good. I suspect some egg drop soup recipes add a thickener to the broth. This recipe is very thin. Since I was looking for a low-carb recipe, it is probably better that it does not include a thickener.
