Very good breakfast fare. I didn't have breadcrumbs and the store wasn't open yet, so I used rolled oats. Also, egg substitute. Worked out fine. Next time I am going to add some corn.
These egg cakes were terrific! I served them with vegitables and bread for a light dinner. It was wonderfully easy for a light summer meal. Not a lot of "kitchen time". That is a great plus when the kithen is a hot.
Cruzzo,What a good brakfast these made,and yes they were like little omlettes,and they were so easy to make it only took a few minutes and we were sitting down eating them,We had them with bacon and toast and jelly,and it made a very nice breakfast.Thank You,Darlene
These were really good and different. They were also easy to make. I followed the recipe as written other then I used eight eggs (I thought that's what the recipe said but when I went back, seen it said 6 but already had 8 in). I also didn't add the parsley as I am not a huge fan of it. Nice change for breakfast.

After the early morning prayers DH and I didnt feel like going to bed and were abit peckish so Idecided to make ur egg cakes. I followed your recipe except I didnt have any parmesan so i subed mozzerella and fete cheese i also added some chopped olives.Very quick and easy and nice teasting at the same time. Thank you.
Wonderful little cakes!!!!! My family really liked them, we topped them with salsa, sour cream.
This is a wonderful little recipe to have in a pinch for something fast, filling and tasty. The add-in possibilities are endless. I kept mine warm in the oven as I was frying and then melted a little shredded cheese over them. Terrific!
These are great little egg omelettes,I served them with fried potatoes and warm crusty bread
Although I don't care for omelettes my husband really liked these! He suggested next time I add some diced potatoes. Very easy to make.
