I added diced ham to the eggs (VG). Not everyone used the salsa, but the whole family enjoyed the meal!!!

This was a nice little lunch today. I used a cheddar and monteray jack cheese mixture since I had some on hand. Very tasty. Made for Jammin' Java Jivers ZWT5

Buenos dias and gracias for this tasty way to mix up my usual breakfast. Normally, I have a bowl of cereal so this really was different in a good way. The only difference I made was to add in a bit of guacamole that I had left over from the night before and to use a cheddar and Monterrey jack combo for the cheese. Made for Chow Hounds on ZWT5.

MMMMM!!! This made for a quick and easy delicious breakfast. The kids would not have liked the taco sauce so I made it just for me. I used a mixture of cheddar and monterey jack cheese and it was wonderful. It would probably be really good with pepperjack too. I made this for ZWT5 for the Cooks with Dirty Faces. Thanks for posting this great recipe!

Quick and simple! Made for a nice light lunch. I used a whole wheat tortilla and a mild, chunky salsa. Made for Recommend It Tag game. :)

I cooked these up over the weekend and wrapped them in foil and put in the fridge. My boys took them out of the foil and popped them in the microwave for a quick and easy breakfast. I followed the recipe as written other then my boys wanted hot sauce instead of taco sauce on theirs!

My family LOVED these for dinner last night. I threw some hashbrown patties in the oven and tossed a bowl of fruit together to go with it. My boys asked me if I'd give them the recipe when they grow up. :)

Quick, easy and so versatile! I used whole wheat tortillas and made my daughters plain without the hot sauce, mine just as stated, and my husband's spread with spicy guacamole, and strips of left over steak. We all loved this! Breakfast was easily tailored to each of our wishes and on the table in minutes. Thanks for posting Charmie! :)

I make these all the time for a quick and easy breakfast on the run. These take just minutes to make and are great to take on the way to work or school. I love these and this is alot better than any breakfast sandwich at a fast food chain. Healthier too! Thanks for sharing.

I made this for ZWT III. This makes for a quick and tasty breakfast. These freeze well too and are great for grabbing, microwaving and off you go. The only changes I made was to add a little chopped onion and green bell pepper to the eggs as they cooked. My grandkids like a dollop of sour cream added to their burritos. Thanks Charmie for sharing a very quick, easy and yummy recipe.

I've been making these often for my DH since coming to Iceland & ZWT reminded me it was time for them again. I expanded your version by adding crisp bacon & fresh chives. Then I served w/fried potatoes & fruit on the side. DH was sure happy this morning! Thx for the reminder.

This makes a nice quick breakfast that lends to itself to variety. I made this using tortillas made from your recipe. I also added a little sausage when cooking the eggs. Great quick breakfast treat.
